SWEET POTATO CEVICHE

This is an alternative to traditional ceviche that is made out of fish that’s cured in lemon. In this recipe we ‘cure’ thinly sliced carrots and sweet potato!
Ingredients: (makes 2 servings)
2 large sweet potatoes
1 large carrot
some cilantro
2 large lemons
garlic 1 clove
dried chilli flakes
2 tbsp olive oil
Directions
For this recipe, it is useful to have a food processor at hand or another device that can slice the carrots and potatoes extremely thin. The thinner the slices, the better they will be ‘cured’ by the lemon! So very thinly slice the carrot and potatoes then place the slices in a large dish. Pour the lemon juice of 2 lemons over the slices and let this ‘cure’ for about 15 minutes before adding the mashed garlic chilli flakes and chopped cilantro. Season with salt and pepper and you have yourself a very nice side dish for a grilled salmon or cod filet!
