STRAWBERRY AND VANILLA YOGHURT
Strawberry and Vanilla Yoghurt by Maya Nassar
(Makes four servings)
Ingredients:
4 tbsp. of amaranth seeds
3 cups of nonfat yoghurt
½ tsp. of vanilla extract
2 cups of strawberries
1 tbsp. of honey
Directions:
Using a frying pan, toast the amaranth seeds while shaking the pan for one minute. Keep aside to cool. Set aside four strawberries and slice the remaining. Place the sliced strawberries at the bottom of four serving glasses. Mix the vanilla extract with the nonfat yoghurt and honey then stir with the amaranth seeds. Spoon the yoghurt into each glass and top up with the four remaining strawberries.
