SAUTÉED BABY SPINACH WITH VODKA AND GARLIC

Sautéed baby spinach with vodka and garlic 

Serves 4

Great side dish

Ingredients

8 cups of baby spinach

1 ounce of vodka

1 tbsp olive oil

1 clove of garlic

1 onion

2 tablespoons of pine nuts

Directions

Roast the pine nuts in a very hot dry pan. Don’t take your eyes of them as they burn easily. When roasted set aside to cool of.  Crush the garlic  and fry in a little olive oil add the onions which you’ve cut in half rings. Poor the vodka over the mixture and let simmer for a few minutes before adding the baby spinach. Serve on 4 small plates or one big plate and sprinkle the pine nuts on top. Bon appetite!
