PUMPKIN SOUP WITH FETA

Nothing is more comforting than a big bowl of steaming soup! This soup is healthy, hearty and will definitely satisfy!

Ingredients:

pumpkin 1kg

carrot 1

1 or 2 apples

onion 1 big

clove garlic 1

olive oil 1 tbsp

1 liter chicken or vegetable stock

1 tablespoon curry powder

fetacheese 100g

Salt and pepper to taste

Directions

Cut the pumpkin and remove all the seeds. This can get a little messy so be sure to have a waste bin at hand! Cut the rest of the vegetables and the apples. Fry the diced onions and garlic in the olive oil till they are sauteed and then add in the rest of the vegetables and the apples. Stir around for a minute and then add the chicken stock and the curry powder. Once the mixture can be cut by a fork, it will be ready to blend. You can either put the mixture in a blender or use a hand blender in the soup pan. When you've blended the mixture to a nice smooth soup, you can add some crumbled feta cheese on top as you serve the soup in a bowl. This soup goes really well with a nice leafy salad!
