CHICKPEA PANCAKE WITH SPINACH FILLING
Chickpea pancakes with spinach filling
150 ml milk
100 g chickpea flour
2 cups spinach leaves
half an onion
Mix the chickpea flour, milk and the egg till it becomes a smooth ‘pancake’ batter but add a pinch of salt. Just bake them as if they were regular pancakes. For the filling, stir fry the onions and spinach. Place the spinach mixture on the pancakes and voila!
