BROCOLI SOUP

Broccoli is very healthy and easy to make into a delicious and filling soup. You can dress the soup with little bits of bacon or tiny bits of cheese, or eat it plain, which I can assure you is still very tasty!

Ingredients: (makes 4 servings) 

1 large onion

300 g broccoli

1 medium sized potato

2 tbsp of olive oil

1 liter water

2 vegetable or chicken stock tablets

3 tbsp of creme fraiche (optional)

Directions

In a large pot, fry the diced onion. Add the peeled cubed potato and the broccoli to the pan and add  water so that the broccoli is just covered. Then crumble the stock tablets into the pot. Let this

simmer on low heat and when the vegetables are soft enough to be able to blend,  take the pot off the fire and either pour into a blender or use an immersion blender.

You can stir in a some creme fraiche or maybe top the soup with some bacon bits or cheese to make it even more tasty!
