BEAN SALAD

Ingredients: (serves 4)

1 red onion

6 tbsp white wine vinegar

75 g garden peas

75 g green garden beans

3 cloves of garlic

100 g string beans

330 g white beans

2 tbsp olive oil

75 ml white wine

20 g flat parsley

3 tbsp extra virgin olive oil

Directions

Slice the onions into rings and mix them with the vinegar, leave for 15 minutes and then take out the onion and save the vinegar for later.  Meanwhile bring 2 pots of water to a simmer. Boil the garden peas for 1 min and rinse with cold water. Cook the green garden beans for 4 minutes and rinse with cold water. Set this aside. Fry the garlic for 2 minutes in the olive oil and then add the string beans and wine, then let stew for another 10 minutes or till the string beans are al dente. Now add the white beans, garden peas, and garden beans then heat. Season with salt, pepper and chopped parsley.
