STIR FRIED BIMI WITH QUINOA

Ingredients

1 cup of uncooked quinoa

1/2 sliced spring onions

300g fresh bimi

2 cloves of garlic

1/2 tbsp sesame oil

2 tbsp oyster sauce

1/2 tbsp soy sauce

1 tbsp toasted sesame seeds

1 red pepper

Directions

Cook the quinoa and let cool before adding the spring onions.

Mash the garlic and fry in the sesame oil until fragrant. Add sliced red peppers to taste and stir fry for 2/3 minutes.  Add the bimi stalks, the oyster and soy sauce and stir fry till cooked firm to the bite.  Remove from the heat and sprinkle sesame seeds. Serve with the quinoa.
