RAINBOW SALAD

Rainbow salad

Serves 2

Great vitamin packed lunch

Ingredients

1 cup of shredded carrot

1 cup of shredded red cabbage

1 cup of julienne cut cucumber

1/2 cup chopped parsley (flat or curled doesn't matter)

1 cup cubed avocado

dressing

one onion diced finely

1/2 red wine vinegar

1 tbsp mustard

1clove garlic

1/4 olive oil

Directio

Grab a large dish and categorise the vegetables next to each other so that you have a pretty colour palette as if it were a rainbow! In a blender, mix the dressing ingredients. Poor over the salad and voila!
