QUINOA AND FETA CHEESE SALAD

Quinoa and Feta Cheese Salad by Maya Nassar

Ingredients:

(Makes four servings)

1 cup quinoa

1 cup feta cheese

1 cucumber

1 red onion

2 cups black olives

1 cup parsley

4 large tomatoes

1 tbsp. olive oil

Directions:

Cook quinoa before mixing in a bowl with other ingredients.  Add salad dressing and season with salt and pepper.

Calories per serving: 300
