QUINOA AND BROWN RICE SALAD

This is a delicious salad full of fiber, healthy fats, proteins and vitamins. You can easily bring this salad to work in a container for lunch or have it as dinner.

Ingredients:

(Makes 2 servings)

1.5 cup brown rice/quinoa/grains mix

100 grams of lean turkey filet

1 onion

cucumber

2 tomatoes

1 small avocado

1 small onion

half red pepper

clove of garlic

olive oil

Directions:

Wash the rice/quinoa/grain mix and then put in a large pot with boiling water. Let boil for 10 minutes, get rid of the water and let the mixture cool off. Season the turkey with salt and pepper (or any other spice you like!) and place on the grill till done.

Dice the onion, cucumber, tomatoes, pepper and avocado into small cubes and mash the garlic.

Dice the cooled off turkey and put all the vegetables with the rice/quinoa/grain mixture. Add the garlic and poor some olive oil over the salad. Season with salt and pepper, bon appetite!
