Fast fennel soup

This is a healthy soup for one of those days you don't have a lot of time to cook yet want to whip up something healthy and homemade. Serves 4 people.


1 liter water with 1/2 vegetable stock tablets

1 small fennel bulb

40g angelhair noodles (wholegrain)

lemon juice of 1 lemon


Bring the water to a boil and add the stock tablets and simmer on low heat. If necessary, remove the outside leaves of the fennel. Remove the green but don't throw it away, this will serve as a garnish for when you serve the soup. Cut the fennel in thin fine strips. Add them to the simmering broth. Add the broken angel hair noodles and the lemon juice. Simmer for about 20 minutes. Serve in large plates and sprinkle the fennel green on top.
