CHICKEN SPINACH AND BROWN RICE

Chicken, Spinach and Brown Rice by Maya Nassar

(Makes four servings)

Ingredients:

1.5 cups of brown rice

6 oz tofu

2 chicken breasts

2 courgettes

2 cups of mushrooms

2 tbsp. soy sauce

2 cups spinach

chickenspinach

Directions:

Cook the rice and stir-fry chicken breasts for 2 minutes. Add in tofu, mushrooms and courgettes and cook altogether for 3 minutes. Add in spinach and mix with soy sauce. Serve on top of rice.
