CARROT SALAD

This salad proves that you don’t need to go overboard to prepare a delicious dish. This carrot salad can be served as a side dish with a main course or even as a healthy snack.

Ingredients: (for 4 servings)

500 g of julienne cut carrot

1 orange

4 tsp of honey

2 tbsp of olive oil

sesame seed (toasted)

salt and pepper

(optional cilantro)

Directions:

To make the dressing, zest the orange (one stroke should do it) and squeeze the rest of the orange. Add the honey, olive oil, salt and black pepper to this mixture.

Put the julienne cut carrots in a medium sized bowl and mix with the dressing. Lastly, sprinkle the toasted sesame seeds over the salad.

If you like cilantro (not everyone does), you can chop it up and sprinkle it over the salad.
