Carrot Muffins by Maya Nassar

(Makes 12 muffins)


180g of flour

½ cup of brown sugar

½ tsp. of cinnamon

½ tsp. of salt

2 medium eggs

1 banana

3 cups of carrots

10 tsp. milk

2 tsp. baking powder

1 pinch baking soda

¼ cup of butter


Heat oven to 200 degrees Celsius. Line a tray with 12 paper muffin cases. Mix flour in a bowl with sugar, cinnamon, salt, baking soda and baking powder.  In another bowl, whisk eggs with milk and butter then add into bowl with flour. Mash the banana and add into flour bowl with carrots. Divide mixture into muffin cases and bake for 25 minutes.
