BREAD FRUIT
Bread Fruit by Maya Nassar
(Makes one loaf)
Ingredients:
450g mixed dried fruits
450g flour
2 tbsp. of marmalade
1 tsp. cinnamon
1 cup brown sugar
2/3 cup of almonds
1 medium egg
Directions:
Place fruit, almonds and sugar into a bowl and fill with warm tea. Cover bowl and leave to soak overnight. Heat oven to 170 degrees Celsius and grease a loaf tin. Stir flour, cinnamon and marmalade and egg into soaked fruit and beat well. Pour into tin and bake for 90 minutes. Cut into 12 slices.
