EGGPLANT SALAD

This simple salad can be prepared in no more than 20 minutes but tastes like a million bucks!
Ingredients (for 4 servings)
4 tbsp of extra virgin olive oil
2 eggplants sliced in length
2 tbsp of roasted pine nuts
a bunch of basil leaves
salt and pepper to taste
(optional, a few drops of Sriracha sauce)
Directions:
Whisk the olive oil with salt and pepper. Bring a grill pan to high heat and grill the eggplant slices in batches. Place in a bowl and add the dressing. Sprinkle with the roasted pine nuts and basil.
As simple as that!
